We always make corned beef around St. Patrick's Day. Because of American's affinity for making it around the holiday, you can easily find it at the store, so we make it in the Instant Pot. But then we have a ton left over.
Aside from making sandwiches, corned beef hash is the next best things for using up leftovers.However, on a low carb diet, you can't eat the potatoes that are an integral part of the dish. That's not going to stop us from enjoying though.
We've just made a slightly different, keto version of our favorite. This keto corned beef hash uses cauliflower in the place of the potatoes. It's not the same, but we don't mind. It's still delicious!
What is Corned Beef Hash?
Classic corned beef hash is just potatoes, onions, and corned beef fried together in a skillet. It's like a breakfast hash, but can be served as a side dish for other meals, as well.
Because this is a low-carb version, we've replaced the potatoes with cauliflower. Since cauliflower becomes very tender and soft, it mimics the potatoes quite well. You just need to make sure to cook them thoroughly, so the sweetness comes out and the sulphur taste dissipates.
Ingredients You'll Need

This is a really easy recipe that you only need 4 ingredients to make, plus some seasoning. You can use store bought corned beef, or make your own and use the left overs in this recipe.
- Butter
- Cauliflower – cut into small pieces, this mimics the potatoes in the classic dish
- Onion – onion does add some extra carbs, so if you're keeping it as low as possible, omit the onion. You can replace the flavor with a little bit of sliced green onions if you want, which have less carbs than white onions.
- Bell pepper – You can choose any colored bell pepper or a combination. Cut them in equal chunks.
- Corned beef – Make your own or use a store-bought prepared corned beef. You can also replace it with roast beef, pastrami, or brisket if you can't find corned beef.
- Fresh parsley
- Salt and ground black pepper
How to Make Keto Corned Beef Hash
Typically, you would saute onion and potatoes for hash, but we've replaced the potato with low-carb cauliflower. No, it doesn't have the same texture or flavor, but it can be a great replacement in this dish. Just be sure to cut the pieces very small so they can get become tender.
Cut the cauliflower into bite size pieces and steam until tender, about 10 minutes.

Melt the butter over medium heat in a large skillet. Add the onion and bell peppers and sauté them until tender and translucent. Add the steamed cauliflower and sauté until browned.

Stir in the chopped corned beef and cook until warmed through. Season with parsley, salt and pepper to taste. If you want, you can even add some shredded cheese to the mix or top with a fried egg.

How Many Carbs Are in Corned Beef Hash?
This version of corned beef hash has very few carbs due to the replacement of potatoes with cauliflower. We were able to get the carb count down to just 5 net carbs per serving. This is 9 total grams of carbs with 4 grams of fiber, for 5 net grams.
If you want to reduce the carbs even further, you can replace the onion with green onion and leave out the bell pepper, however those are the flavor makers in this recipe, so you'll want to replace them with something else, like garlic, asparagus, or more herbs.

What to Serve With Keto Corned Beef Hash
Corned beef has is most often served for breakfast, so it stands to reason that you would serve this alongside eggs or other breakfast dishes. I like to make a fried egg and set it on top of the hash for a complete breakfast.
You can also serve this keto corned beef hash with steamed cabbage, or mashed celeriac or cauliflower. It's also great just with an easy side salad.
